Homemade Wheat Sandwich Bread (with a #vegan option!)

So, we spend a lot of money on bread around our house. Like, it’s ridiculous. Because of my son with food allergies, I am very picky about what brand and what ingredients are in the bread. We have been buying bread from Trader Joes for about $4.00 per loaf (or more… can’t quite remember) because I like the ingredients, and it doesn’t have any allergens in it. But… that much money per loaf and I buy 6 loaves of bread every 2 weeks… that’s a LOT of money for bread! So, I’ve decided I need to make more of my own bread. My mom has a bread machine that I can use… but I don’t like my bread BAKED in the bread machine. So, I make the dough in the bread machine, and then bake the bread in the oven. This recipe came out PERFECT! It’s got a nice crispy crust with a soft and slightly doughy inside… DELICIOUS! I don’t want to buy bread again! My mom also had some FRESHLY GROUND wheat flour. Like, not store bought… she had Wheat Berries, ground them in her Grain Mill, and gave it to me! WHAT?! Yes!!!!! Freshest you can get! I used half of this fresh flour, and half of the all purpose flour (I use Lily Flour…. I also have used King Arthur).

For 1 loaf, so double for a batch of 2.

Whole Wheat Bread

Ingredients

1 1/4 cup warm water (NOT hot! You don’t want to “kill” the yeast)
2 tsp pure cane sugar (organic is preferred)
2 tsp fresh squeezed lemon juice
2 TB local honey
2 tablespoons butter , melted (you can use Earth Balance for the VEGAN option!)
3/4 tsp kosher sea salt
1 1/2 cups whole wheat flour
1 1/2 cups unbleached all-purpose flour, plus possible extra White Lily All Purpose Flour

3/4 TB bread machine yeast

IF you have a bread maker this will be quite easy! If not… BORROW ONE!! HA! It just makes it soo much easier! If you WANT one, check out this awesome and ON SALE breadmaker: Cuisinart Breadmaker

Load your bread maker in the order the ingredients are listed. Wet ingredients first, and ending with the bread machine yeast. Then, set to the DOUGH cycle. Do NOT select a bread cycle. You want dough only. Mine was a 1 hour and 20 minute cycle. When the bread machine is kneading the dough, I watch it to make sure it’s only slightly sticky, but still is being kneaded around by the machine and not sticking to one side of the pan. If needed add 1 TB of all purpose flour at a time until it’s just SLIGHTLY sticky… but not too dry! If it’s too dry, add 1 tsp of water at a time. Get a bread pan (glass or aluminum, didn’t matter… I tried both) and grease it either with a bit of butter, or cooking spray and set the bread pan aside.

Once the timer goes off and your dough is done, butter up your hands… or flour them… 🙂 … so that the dough doesn’t stick to your hands when you take it out. Remove the dough (it will deflate, that’s fine!) and make sure the paddle of the bread machine does not stay in the dough! Kind of knead it down a bit, and shape into a rounded rectangle. Place into greased bread pan and then set a damp kitchen towel over top and allow to rise for 30 minutes. At this time, preheat your oven to 350 degrees F.

After 30 minutes, the bread dough should have doubled in size. Remove the towel, and place into the preheated oven and bake at 350 for 30 minutes. It should be golden brown with a nice crispy crust and chewy moist bread inside!

I cut it right away and me and my 2 kids ate a nice thick slice just dripping in melted butter… OH MAN!! It was DELICIOUS!!!

Blueberry Banana White Chocolate Bread

This bread was AMAZING!!! Besides the fact that it smells like absolute HEAVEN when it’s baking… DELICIOUS… oh man… dessert, breakfast, mid-day snack… whatever. YUM! My family loves it, and I brought it as a snack to my friends… and they enjoyed it too!!! YUMMY!!!

Ingredients:

1/2 cup unsweetened organic applesauce
2 Tb butter at room temperature
1/2 cup sugar (or could use 1/2 cup honey)
2 cups all purpose flour
1/2 tsp sea  salt
3/4 tsp. baking soda
2 ripe bananas mashed
1 tsp. vanilla
2 eggs
1/3 cup organic low-fat PLAIN yogurt

1 cup white chocolate chips
1 cup blueberries (DRY, fresh. Then toss in 1 Tb of flour.) I used frozen, thawed and dried a bit on a paper towel and tossed in 1 Tb of flour.

1. Preheat oven to 350°F. Spray a 9×5-inch loaf pan with cooking spray.
2. In a medium bowl, whisk together the flour, baking soda and salt.
3. In a separate large bowl, beat the sugar and butter and applesauce with an electric mixer at medium speed until well blended (about 1 minute). Add the eggs one at a time, beating well after each addition. Add the banana, yogurt, and vanilla; beat until blended. Stir in the flour mixture; just until moist. Don’t over-mix. Stir in the chocolate chunks and then gently stir in the blueberries. If you want, you can sprinkle a few additional chocolate chunks and blueberries on the top to make it look pretty.
4. Spoon the batter into the prepared pan. Bake for 50 to 60 minutes or until a wooden pick inserted in center comes out clean. Cool 15 minutes in the pan on a wire rack. Remove from pan and cool completely on the wire rack.

*This recipe turns out perfect for me, so here are the details: We bake at sea level in a greased glass blue pyrex pan and we bake on the middle rack in a electric oven.
*If you use frozen blueberries, dry off and toss in flour. Do not wash and then toss in, you want to DRY as much as possible so you don’t add too much moisture.
*If you bake in a dark metal pan or if you are baking at a different altitude or using an gas oven, you may possibly get different results.
*Oven temperatures can vary quite a bit, so if you have an oven thermometer that is helpful to see if yours is recording the right temperature.
*If the top is browning too quickly, cover the top with foil in the middle of baking to prevent it from browning further.

Grown Ups Grilled Cheese with a Quick Corn Chowder

This was a quick dinner, in total took me about 25 minutes start to finish. Not too shabby since I had no clue what I was going to make when I walked into the kitchen!! I was going to make a type of sandwich and doctor up some soup I had from Trader Joes… but I found out it was expired. OOPS!! So, here’s what I came up with!

Chowder

Ingredients:

1 strip of bacon chopped into small pieces
4 small yukon gold potatoes diced into 1/2 inch pieces
1 1/2 cups of milk (I used organic PLAIN coconut milk)
1 TB PLAIN (not vanilla!!) yogurt
1/2 tsp minced garlic
1/4 onion chopped
1/4 cup water
salt and pepper to taste
dash of hot sauce (to desired spiciness)
3/4 cup of corn (I used frozen)
Parmesan Cheese as garnish

Directions:

In a large pot (soup size) place the bacon pieces and start cooking to sizzling. Once starting to brown, add the onion and potatoes. Once the onions have started to brown, turn down the heat to 2 (simmer… med/low). Slowly add the milk, not allowing it to boil and then add the water. Cover with a lid and let simmer on low until the potatoes start to soften. Then, add the garlic and the remaining milk and whisk in the yogurt. Add the hot sauce, corn and the salt and pepper to taste. Let simmer on low. When serving, add shredded parmesan cheese as garnish on top to add a salty-peppery cheesiness.

Grown up Grilled Cheese

2 slices of sourdough
1 slice aged swiss
1 slice gouda cheese
tomato
Fresh Basil
thinly sliced avocado
(butter on the undersides of the bread for in the skillet).

I put the buttered side down, and then added the cheese. When the cheese was melted, I added the toppings, melted a bit more and made sure the bread was sufficiently toasted, and then made into a sandwich and plated. YUM!
