Mixed Greens Chicken Avocado Salad with Lemon Poppy-seed Dressing

Mondays…. I made this salad last night. You know the movie “Office Space”?

I seriously LOVE that movie. I really do. I’ve seen it quite a few times, and it’s still funny every time!

I was thinking about that quote yesterday. The day seemed endless. In South Carolina, there is a yellow haze of pollen floating through the air, and coating my throat and lungs causing swelling and coughing and overall miserable feelings in our house. What is the need for this much pollen? I mean, you look outside and you can SEE THE BREEZE. I’m not joking. We have enough pine trees. The pollen needs to dial it back a bit.

I know this rant will do nothing. But I felt the need to whine. And then I had a glass of wine. HA!

Anyways… back to my salad. My husband said that he was craving his chinese food leftovers last night and wanted to eat that, and was going to be coming home late. I, however, was NOT craving that. So… I looked at my meal plan and decided on a yummy and filling salad!

This one is seriously soo good! I did have popcorn later that evening as a nighttime snack, but this one was filling, sweet yet tangy, and really fresh. You have your crunch, chewy, sweet, tart… everything!

Ingredients

Dressing
    • 1/4 cup olive oil
    • 1/4 cup canola oil (or any light oil)
    • 2 tsp lemon zest
    • 1/4 cup fresh lemon juice
    • 2 Tbsp honey
    • 2 tsp spicy brown mustard, OR dijon mustard
    • 1/4 tsp salt
    • dash of fresh ground pepper
    • 2 tsp poppy seeds (or more if you desire)
  • Mix it in a 2 cup measuring cup with a whisk, or you can mix it in a Salad Dressing Mixer.

Salad
  • 4-6 chicken tenderloins cooked (or leftover grilled chicken on a Cast Iron Pan) thru and sliced. (I cooked mine in the skillet with a bit of olive oil, oregano and salt and pepper. The more basic the chicken, the better. You’re gonna have the flavor in the salad and the dressing)
  • 5 oz baby spinach
  • 5 oz. Artisan salad mix (or spring greens)
  • 1 avocado, cored and diced
  • 1/2 cup shaved or grated parmesan cheese
  • 1 sliced and halved cucumber (I prefer English or “hothouse” cucumbers)
  • 1/2 cup dried cranberries
  • Optional: You can add some almonds or pecans as well if you’d like!!!

Lemon Ricotta Spaghetti with Spinach

So, as I have decided to lose a few LB’s and cut out my carbs except for at dinner, carbs are kind of my focal point at dinner. When you look forward to it ALL day… it’s a special meal! I never knew you basically go through a type of detox from carbs and sugars when you start to cut them out. I mean, back in college I did the “South Beach Diet” and I remember something about that. 🙂 I truly am realizing it though. Cravings because your body is wondering what the heck is going on!
So, I decided I need carbs. I do need to cut back as I’ve previously said because it gets a bit ridiculous. … but I needed more veggies and greens and FRESH fruits in my life!
At least this pasta dish has spinach greens and lemon zest! Right?! 🙂 Ricotta cheese adds protein too!  I calculated an approximate 8g of protein per serving, and if you toss some shrimp or chicken in it (as suggested by my awesome friend) it will up that protein content quite a lot!

Ingredients

Salt and pepper to taste
1/2 pound spaghetti
1/2 cup whole-milk ricotta
1 tablespoon olive oil
1 teaspoons grated lemon zest
1 TB lemon juice
1/4 tsp garlic powder
1 cup chopped (or whole) baby spinach
2-3 tsp. Parmesan cheese
1/2 tsp oregano
1/4 tsp dried thyme
1/4 cup pasta water set aside

Preparation

Prep: 5 Minutes
Cook: 10 Minutes
* Bring a large pot of salted water to boil. Add spaghetti and cook until al dente, about 10 minutes.
* In a bowl, stir together ricotta, olive oil, lemon zest and salt&pepper, garlic salt, grated parmesan, lemon juice, oregano and thyme. Season with salt and pepper.
*Drain spaghetti, reserving 1/2 cup cooking water. Return pasta to pot and stir in ricotta mixture, spinach and 1/4 cup pasta cooking water. Toss well, adding more pasta cooking water 1 Tbsp. at a time, if necessary. Serve hot.

Shrimp Alfredo

I’ve decided I am going to try my best to restrict most of my carbs to dinner. I, personally, cannot give up carbs without going a little bit crazy. So, in trying to tone of my slightly soft figure… carbs and sugars are being lowered and I am making choices using healthy fats… as much as possible. I am also watching my portions.
This alfredo recipe uses all natural ingredients, it’s inexpensive to make, delicious, and if you’ve been good all day, a great treat at the end of the night! And… if you want to eliminate the carbs… remove the pasta and use spaghetti squash! I got this from food network, and it’s one of Giada’s recipes. I made a few changes, but this is a really really good one! Giadas Alfredo

Ingredients

10-12 ounces fresh pasta
2 cups half&half
1/4 cup fresh lemon juice
6 tablespoons unsalted butter
1 cups grated Parmesan
1/4 tsp minced garlic
1 teaspoons grated lemon zest
Pinch freshly grated nutmeg
Salt and freshly ground pepper

Directions

Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 4 minutes. Drain.

Stir 1 1/2 cups of the cream and the lemon juice in a heavy large skillet to blend. Add the butter and garlic, and cook over medium heat just until the butter melts, stirring occasionally, about 3 minutes. Remove from the heat.

Add the pasta and toss. Add the remaining 1/2 cup of cream, and Parmesan to the cream sauce in the skillet. Add the lemon zest, nutmeg, salt, and pepper. Toss the pasta mixture over low heat until the sauce thickens slightly, about 1 minute.
Serve immediately and enjoy this lemony, creamy, fresh dish!
I added shrimp to mine! I follow Ina Garten’s recipe and drizzle with olive oil, and salt and pepper and then roast them at 350 in the oven  for 10-12 minutes. They always come out PERFECT!

We all know food is important. Some of us get what is called “hangry” like I do. When I’m hungry… sometimes I act a little crazy. I’m ashamed… but it’s true. Gotta remember to keep snacks with me for me AND the kids! Here’s a shirt to go with this statement! I may need to purchase it!

Baked Penne/Ziti with Mini Meatballs

It’s Sunday night and I seriously have no idea what to write today. I seem to be completely out of words! So, I’m just going to stick to the recipe!! 🙂

This is baked “Penne” – Ziti … with Mini meatballs …

Make the meat balls as listed above, and then set them aside.

Ingredients

Salt and freshly ground black pepper
1 pound ziti or penne
1/4 cup extra-virgin olive oil
1 1/2 jars pasta sauce of your choice
1 cup whole milk ricotta
1 tsp dried oregano
2 Tb fresh basil
1 tsp Italian seasoning
1/2 cup shredded mozzarella
1/4 cup grated Parmesan
2 TB butter

Directions
Preheat oven to 350 degrees F.

In a large pot, bring 4-5 quarts of salted water to a boil. Add pasta and cook until al dente, about 8 minutes. Drain pasta in a colander and set aside. If not using immediately, cover top with plastic wrap so that pasta does not dry out. Do not rinse pasta with water since you want to retain the pasta’s natural starches so that the sauce will cling to the ziti or penne.

In a large skillet heat the oil over medium-high heat. When almost smoking, add meatballs in batches and without moving or turning the meat, allow it to brown for about 3 minutes. Turn meatballs and brown other side. Continue to cook until all sides are golden brown. Remove meatballs to a plate.

In a large bowl, combine the spaghetti sauce and ricotta and mix well. Add the cooked penne and meatballs and toss gently.

In a large greased baking dish, pour in pasta mixture. Sprinkle the mozzarella, Parmesan, and remaining Romano all over the top. Dot with the butter. Place baking dish on top of baking sheet covered with aluminum foil to collect any drippings from the dish. Bake until top is golden brown and bubbly, about 30 to 40 minutes.

Browned Butter and Balsamic Ravioli

Do you ever just browse Pinterest for fun? Do you ever find yourself in trouble because you have gone thru endless pages because of the endless scroll in Pinterest and suddenly it’s been over and hour and your clothes are still not folded? That was me yesterday. I just wanted to check out a couple of other ideas for meals, just in case I saw something new… and an hour passed during precious naptime – when I can actually be productive – and my clothes definitely didn’t get folded. Oh well, there’s always today!!!! Plus, the weather yesterday was beyond beautiful, and we just HAD to spend a lot of the afternoon outside. I knew today was gonna be a bit gloomy… and it is!

One of my favorite chefs to watch on TV is Giada. She has a very good way to cook… she uses REAL ingredients, and just eats smaller portions. I’m still working on the smaller portions thing, but I agree with the using REAL ingredients. Even Dr. Oz has agreed that a lot of the “low fat, fat free, low cal” stuff adds chemicals and things not good for you, instead of you putting just smaller amounts of real food into your body. I try to use wholesome ingredients, as well as filling ingredients. I also try to have lighter and smaller meals throughout the day. Instead of 2 additional BIG meals, I have 3 or 4 small, snack like meals that are light and filling, and a bit higher in fiber and protein to keep me from picking junk food when I’m “STARVING”! 🙂

This dinner is not light in calories, but it IS full of AMAZING flavor! And this one has enough protein that with a smaller portion, you’ll still be satisfied!

I changed more than 3 ingredients, so the recipe below is mine, but it was more than inspired by her recipe listed above. 🙂

18 to 20 ounces store-bought fresh refrigerated ravioli (cheese, mushroom, or squash) (if frozen, the cooking directions are different)
6 tablespoons unsalted butter
1 tablespoon balsamic vinegar
1 tablespoon white balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/3 cup toasted, chopped walnuts (optional)
2 chicken tenderloins
1/2 tsp garlic powder
2 TB – 1/4 cup white wine for deglazing pan – optional
1/4 cup grated Parmesan

Directions
Bring a large pot of salted water to a boil over high heat. Add the ravioli and cook 4 to 5 minutes, until tender but still firm to the bite, stirring occasionally. Drain ravioli and drizzle with 1-2 tsp olive oil to keep from sticking together. Place onto serving plate, or into a bowl and set aside.

Drizzle 2 TB olive oil into skillet and place the 2 diced chicken tenderloins into the skillet. Sprinkle with garlic powder, and salt and pepper. Cook until no longer pink (5 min approx.) and remove from pan and set aside. Place skillet back on stove and deglaze with the white wine to get all the “yummy bits” off of the bottom of the pan.

Then, cook the butter in that skillet over medium heat, stirring occasionally. When the foam subsides, and the butter begins to turn a golden brown, about 3 minutes, turn off the heat. Let cool for about 1 minute. Stir in the white and regular balsamic vinegar, salt, and pepper.

Transfer the ravioli and the diced chicken to the pan saucepan with the balsamic brown butter. Sprinkle walnuts (optional) and Parmesan over the top. Serve immediately.

This one was QUITE delicious! I never would have thought pairing balsamic vinegar and butter would be so delicious, but it REALLY REALLY is!!! Give this one a try for sure!!

Baked Chicken and Gnocchi

Oh Mondays….

Yes, today is Monday. And today, we had homeschool group. My 3 year old son… MILDLY behaved and reminded me of the previous week.

So, last week.. here’s the situation: my son thinks that he can be independent and make his own decisions. As his mother, it is my job to teach him that mommy knows what’s best and if he refuses to do what I say, consequences will follow. The problem? When we are in the car, driving 60+ mph down the freeway, it is VERY hard to discipline a little boy. So, we leave our homeschool group, and he’s tired and hungry. I hand him a baggie of veggie straws (Like… potato straws, but made from veggies… very chip like). 3 seconds later, he LOUDLY proclaims that he’s “ALL DONE!”. I, at that moment in time, cannot reach back and grab the bag from his grimy little hands. I tell him, “hold on to the bag for a minute until mommy can grab the bag”. He then proceeds to start to chuck the veggie straws AT MY HEAD! Yes, yes this is true. I am yelling “No, mommy will take the bag”, as well as telling him consequences that will happen from these bad choices. I start trying to get the bag from him and trying to grab at any part of his body that I can reach, and he stealthily, like a tiny ninja, somehow completely evades my reach! I cannot turn around to see how this is happening, as we are STILL on the freeway. He then starts throwing them all over the car, one at a time and starts yelling “na-na-na boo boo”. Yeah. That happened. By the time we got home 30 minutes later I was fuming and he was asleep. Ugh. I carry him inside, and do NOT put his cars in bed with him like he requested before he fell asleep… (that sure told him!)… and proceed to take my dog out to eat all of the veggie straws from the van floor. Whew! What’s a mom to do? Cry and an call her husband, pray that the next day will be better, and figure out how to properly discipline in the car… working on it… I think I will be a consistent work in progress.

So today… another Monday, another homeschool group day. This evening, I feed my kids their meal (rice and beans with a smoothie… easy.. so very easy) and was going to have that for me and my hubby… then I see the package of gnocchi in my fridge and just HAVE to have it tonight. So, I proceed to start cooking and then go out to my detached garage where I keep all of my meat in our deep freeze. I then find out that for some reason our lock is broken. The key gets STUCK in the door. I literally cannot get into my garage until 1.5 hours later when my husband gets home. So… dinner was late. But whatever, it was good!!!!! Gotta be honest… Mondays are always a bit rough!

So, here’s my craving meal for tonight…. cuz I needed a bit of comfort food!

Baked Chicken and Gnocci!

And, I gotta say, it’s a comfort food and I will definitely be craving it in the future!

Ingredients
1 tablespoon extra-virgin olive oil
1/4 cup finely diced onions
Kosher salt and freshly ground pepper
2 tablespoons unsalted butter
1/2 tsp minced garlic
2 tablespoons all-purpose flour
1 1/2 cups coconut milk (unsweetened, unflavored)
1 cup low-sodium free range, fat free chicken broth
1/4 teaspoon freshly grated nutmeg
2 cups diced chicken. I used 3 large chicken tenderloins seasoned, cooked and diced (Orig. recipe called for leftover rotisserie chicken)
1 17 .5-ounce package potato gnocchi
1 1/2 cups loosely packed baby kale
1/4 cup grated parmesan cheese (about 1 ounce)
1/2 tsp cumin
dash cayenne pepper
2 TB lemon juice
1/2 tsp lemon zest

Directions
Position a rack in the upper third of the oven and preheat to 425 degrees F. Heat the olive oil in a deep ovenproof skillet over medium-high heat. Add the onions, season with salt and pepper and cook, stirring occasionally, until lightly browned, about 4 minutes. Add minced garlic and cook for 1-2 minutes, but do not let burn. Transfer to a plate and wipe out the skillet.

Melt the butter in the skillet over medium heat; add the flour and cook, whisking, 3 minutes. Add 2 TB lemon juice and the lemon zest. Whisk in the milk and chicken broth until smooth; simmer, whisking constantly, until slightly thickened, about 5 minutes. Whisk in 1/2 teaspoon salt and the nutmeg, cumin and cayenne.

Add the chicken, onions and garlic back in, and the gnocchi and kale to the sauce and stir until coated and the kale wilts. Sprinkle with the parmesan, transfer the skillet to the oven and bake until bubbling, about 20 minutes. Turn on the broiler; broil until lightly browned on top, about 3 more minutes.

I definitely kept to a smaller portion with this one, because of the yummy creaminess… but it was DELICIOUS! I liked the uniqueness that the cumin and cayenne added, but you do NOT have to add those spices… that’s my addition. This one you can definitely play around with.

Well, my day is done, I have enjoyed an evening of Bachelor watching with my friends, and now I’m gonna kiss my hubby and babies goodnight! Have a good one!

Lemony Orzo Chicken Sausage Soup

Ok, so since it’s officially fall, I figured I wanted to do some posts on SOUP! What’s better in the fall and winter than soup? The ultimate comfort food, even when it’s low cal! And this one definitely fits both descriptions. Delicious, filling, high in protein and low in fat. So, over the next 2 weeks you will be seeing a lot of soup recipes as I figure out which I like best, which I will put in jars for freezing and lunches… and which I should leave for someone else to perfect… 😉 . So, this one was a winner. I loved it! It was inexpensive to make too. A box of orzo was only $0.89 at Publix! Woohoo! Try this one out for sure!

Ingredients

  • 1 10 oz package chicken sausage halved and sliced (I used 4 out of the 6 links and froze the remaining 2) I also used “Thin&Trim” brand chicken sausage “Sweet Italian” version that is 95% fat free, and has all natural ingredients w/out nitrites!
  • 1 teaspoon olive oil
  • 1 TB butter
  • 1/2 small onion diced
  • 1/2 tsp garlic minced
  • 2 medium carrots, sliced
  • 1/4 teaspon dried sage
  • 1/8 teaspoon dried tarragon
  • ½ teaspoon dried rosemary
  • 3 cups low sodium chicken broth
  • 1 cup water
  • splash white wine (only if so desired)
  • 1/2 cup orzo
  • 1 cups fresh spinach
  • juice and zest of 1/2 lemon (about 1-2 TB of lemon juice)
  • 2-3 TB shaved parmesan for garnish

As you can see, I served this with Grilled cheese that had a couple of sliced of avocado in it… YUM!

Instructions

  1. In stock pot heat sliced sausage until heated through, about 5-8 minutes. Remove and set aside.
  2. Add olive oil to pan. Add onion and garlic, sauté for 1-2 minutes. Add carrots and herbs, lemon zest and juice and 1 TB butter. Continue cooking just until carrots begin to soften. Add splash of white wine if so desired.
  3. Add broth and bring to a boil. Reduce heat and stir in orzo. Continue cooking for 8 minutes or until pasta has finished cooking. Add 1 cup water. Stir in sausage and spinach, stir and bring back to simmer. Serve.

Light Summer Lemon-Yogurt Pasta with Veggies and Shrimp

Light Summer Lemon-Yogurt Pasta with Veggies and Shrimp

Serves 4 (calories: 323 per serving)

  • 8 OUNCES WHOLE WHEAT LINGUINE (OR YOUR PASTA OF CHOICE)
  • 1/2 CUP NONFAT PLAIN GREEK YOGURT
  • 1/2 SWEET ONION CHOPPED
  • 1/4 CUP GRATED PARMESAN CHEESE
  • 1 TEASPOON GRATED LEMON ZEST plus the juice of 1 lemon
  • 1/4 TEASPOON SALT
  • 1/4 TEASPOON GROUND BLACK PEPPER
  • 1 TABLESPOON OLIVE OIL
  • 3 MEDIUM (8-OUNCE) ZUCCHINI, CUT INTO THIN STRIPS (3 INCHES LONG AND 3/4 INCH WIDE, LIKE A BIG STICK OF GUM)
  • 2 GARLIC CLOVES, THINLY SLICED
  • 1/2 PINT GRAPE OR CHERRY TOMATOES, HALVED LENGTHWISE
  • 20 medium shrimp (peeled and de-veined and baked at 400 w/oil and salt and pepper for 8-12 min depending on size of shrimp)
  • 1 red bell pepper sliced

  1. Bring a large pot of water to a boil. Add the pasta, and cook about 9 minutes, or according to the package directions. Drain the pasta. Set aside.
  2. Meanwhile, in a large bowl, stir together the yogurt, Parmesan, lemon zest, lemon juice and salt and pepper. Set aside.
  3. In a large skillet, heat the olive oil over medium-high heat. Add the zucchini, and cook just until wilted, flipping them over occasionally with a spatula. (The zucchini will be soft and somewhat see-through.)
  4. Use a spoon or spatula to push the zucchini aside so a space on the bottom of the pan is clear. Add the garlic, and onion and cook for 15 to 30 seconds, until golden but not really brown.
  5. Mix the garlic into the zucchini.
  6. Stir in the tomatoes and bell pepper and cook until softened, about 2 minutes.
  7. Transfer the zucchini mixture to the yogurt mixture, and stir to combine. Add the drained linguine, and toss gently to combine. Divide among four bowls and serve.

Leftover “Crustless Pot Pie”

Wasn’t even sure what to call this… It started out as me trying to use up leftovers and extra veggies unused in my refrigerator before I go grocery shopping again. Then, as I sat down to eat it… it tasted like pot pie filling… but no crust… and the pieces of chicken were still full tenderloins. Hmmm…. Well? Why not!?

(This will make 3 servings or 4 small servings)

Ingredients:

1/2 bag of fingerling potatoes
1 lg carrot
3 chicken tenderloins
1 cup low sodium free range chicken broth
1 TB olive oil
1/4 tsp minced garlic
1/2 tsp Mrs. Dash
salt&pepper to taste
1/2 onion chopped
juice and zest of 1 lemon
1 cob of corn (I used leftover) with kernels removed from cob
1/2 of a zucchini
Grated Parmesan Cheese (sprinkled on top at the end)

Start out by putting the potatoes in a skillet w/the olive oil and carrots chopped. Stir, and add onions and garlic. After about 5 min add the chicken broth, lemon zest and juice, and seasonings. Drop in the chicken. (Mine was still frozen, but yours can be frozen or thawed). Simmer with lid on for about 15-20 minutes until chicken is cooked through and potatoes are soft and easily cut through with a fork. Sprinkle in the zucchini and corn, stir and put lid back on pan, and remove from heat. Let sit for 5 min. Remove lid, sprinkle with cheese and stir. Add any salt&pepper to taste.

I also made a quick little dessert. I used cherries, brown sugar, raw organic sugar, lemon juice, oatmeal, flax meal and butter. Stirred it all together and baked covered w/tin foil for 30 min. Voila! 🙂

Grown-ups Mac&Cheese

I’m going to call this MY version of grown-ups mac&cheese. Because truly, this is what I would pick over baked Mac&Cheese, or anything similar. This is my comfort food. YUM!

(Anything that I Change or Add, I will put afterwards with a parenthesis or an asterisk *)

  • 2 and 1/2 cups whole wheat orzo (*I used high-fiber orzo)
  • 2 Tbsp. Extra Virgin Olive Oil
  • 2 green onions, chopped (* I used a sweet onion)
  • 1 clove garlic, minced
  • salt and pepper to taste
  • 2 tsp. flour
  • 1 cup milk (I used skim!) (I used unsweetened coconut milk)
  • 2/3 cups spinach, chopped
  • 1/2 cup parmesan cheese, shredded, plus extra for garnish

I then cooked 2 pieces of pre-cooked Trader Joe’s uncured bacon in the microwave until extra crispy, and set it aside. (approximately 40 seconds)

Take 4-6 frozen Trader Joe’s boneless chicken tenderloins and put into skillet w/2-3 turns of extra virgin olive oil. (They do not need to be thawed). Put salt&pepper, garlic powder and a little bit of Mrs. Dash to each side of the tenderloin, and simmer on medium to low heat for 10-15 minutes, or until firm. Then remove from heat and set aside.

Directions:

  1. Cook orzo according to package directions. Set aside.
  2. Heat olive oil in a medium-sized pot over medium heat. Add onions, garlic, salt and pepper and saute for 1 minute or until onions are translucent. Add flour to form a roux and cook for an additional minute.
  3. Add about 1/4 cup of the milk to the pot and whisk to work out any lumps from the roux. When lumps are worked out, add the remaining milk and whisk to combine. Bring to a simmer and cook until sauce has thickened, about 8 minutes.
  4. Add chopped spinach to sauce and cook an additional 2 minutes or until spinach has cooked down. Remove sauce from heat.
  5. Stir parmesan cheese into sauce. When cheese has melted, add cooked orzo to sauce and toss to coat. Garnish with extra parmesan cheese and *crumbled bacon and add *chicken to top or chop the chicken into bite size pieces, and serve immediately.
